Visando avaliar a qualidade microbiológica dos cafés comercializados nos mercados do estado do Paraná, dois lotes de cinco marcas diferentes de café foram submetidos à análise microbiológica de fungos filamentosos e leveduras em duplicata e por dois métodos; método tradicional e método moderno (Petrifilm). Concluiu-se que as marcas apresentaram contaminação microbiológica inferior a permitida pela legislação e que os dois métodos foram eficientes nessa detecção.
To evaluate the microbiological quality of coffees commercialized in markets of Paraná state in Brasil, two lots of five different brands of coffee were submitted to microbiological analysis of molds in duplicate and in two methods: the traditional method and the modern method (Petrifilm). We concluded that the brands had microbiological contamination within the permited by the legislation and that both methods had been efficient in this detection.
